Well a Happy Easter to you, too!

I do not know what our Easter plans entail, yet. If no plans solidify I will probably end up making about 2 dozen deviled eggs. Funny how we eat something with the word devil in it on a day that is supposed to about God. I guess you can’t have one without the other. All I know is that I love me some deviled eggs, much to Pancake Land’s chagrin.

Yesterday, I attended my first cooking class at Cara’s. It was so much fun. It is a strangely exciting experience cooking with a bunch of people. I am so used to cooking by myself that I was secretly dreading having too many cooks in the kitchen, so to speak. It turned out to be good times. The next class is in two weeks and there is no telling what it will be pertaining to. Yesterday, we learned to make two different kinds of Pesto. Pesto is so simple to make and so tasty. It sort of boggles my mind that I have never made it before. There was talk of a knife skills class. This is one of the things that I want to learn more than anything. Sure I want to know how to poach an egg and make red wine reductions, but knife skills cut right to the heart of the matter. Ever since I saw my first television chef chopping onions or filleting a fish, I wanted to know how to use a knife like that. The precision and elegance of a trained knife handler is a thing of beauty. I am rarely precise or elegant in anything that I do, so the idea that with practice I could do that with a knife seems like a kind of saving grace for me.

I was once told that there are two type of painters, those who push paint around and those who touch paint. I am most definitely the former. Big globs of paint smeared around on a canvas, dripping and running down the edges of the painting. That is how I paint. That is how I do everything. Maybe it is the curse of being an Aries. Like the ram, I drop my head and plow head first through things. When asked to dice something, that translates into my brain as keep chopping until the pieces are itsy bitsy. My weapon of choice for this? The biggest sharpest hunk of steel I can lay my hands on. You want me to chop that parsley? Will you hand me that meat cleaver, please?

So, if this knife skills class pans out, I will be very pleased at the chance to learn the techniques of real knife handlers. Then all that is left is to practice. (For anyone who has seen Julie and Julia, this image will make sense.) I envision myself in a kitchen with a mountain of diced onions at my side and no one being able to enter the house without tears pouring out of their eyes.

That’s how it looks in my head anyway.

Now for something completely different.

Why is it that I don’t want to go and do anything until there is a holiday that inevitably closes all of the stores. I had the idea to go make some copies for a new secret project and of course it is Easter so there is no way that FedEx Office is open. I am sure that I will be hard pressed to find anywhere that is open today. Luckily for me, this presents me with the opportunity to go and spy on restaurants that are closed without anyone knowing that I’m there. Mwhahaha….

Well, with that in mind, I should probably go start working on something else. Not that I will leave my computer since writing my articles happens here, but at least I can say that I am doing something else. Sort of. Anyways, Happy Easter. Whatever that means to you. More soon. ~SC
